You can’t be certain that things will turn out exactly as you expect, especially before the deal or situation is 100% completed. An accident may occur between lifting your cup and putting it to your mouth, you can’t be sure that your drink will pass your lips until it does. This an old English proverb used by Shakespeare and, as such, it is fairly well-know in well read circles, but not commonly used in everyday English.
